                        THE GRAPES
                               There are three varieties of cava par excellence, although these
                               are not the only ones which can be used in the production.
                               Together with these we can find chardonnay and the subirat
                               parent for white wines and red garnacha, trepat, pinot noir
                               and monastrell, for reds, all of which are permitted on the
                               production of cava. The success of the Catalonian trio (xarel.
                               lo, macabeo and parellada) lies in their perfect acclimatisation
                               with Mediterranean style climat, which is where the greatest

                                 This is the second most extended  of Cava, it represents 35.3% of all
