RED WINE VARIETIES
GARNACHA
It is the most extended red wine variety (4.1% of the
total). It is a grape with which it is difficult to maintain
the colour and has a fruity expression with a certain
hint of sweetness in Mediterranean and extreme
continental climates. It is used fundamentally for the
production of rosé cavas and is normally accompanied
by pinot noir and monastrell, although it ca also be
found alone with very good results.
TREPAT
An early budding and late harvesting variety
CAVAS & OTRAS BURBUJAS a moderate level of alcohol and balanced acidity, light
with thick skin, large and with compact bunches. It
produces rosé base wines with low intensity of colour,
and with little body. Alone it provides a very special
cava due to its lack of colour and its organoleptic
features.
PINOT NOIR
A classic vine of Burgundy and Champagne, its fruit
is small, dark in colour, violet and highly colouring.
However in the wine the colour is lost more quickly and
it becomes more orange in colour. It represents 2.5%
of the surface registered in 2015. Although it mostly
appears in the company of other varieties, Chardonnay
and xarel.lo among others, it is also produced as
the only grape. Produced alone it is difficult to find
examples which truly represent a variety with such
expressivity and personality.
MONASTRELL
Although it is present at the commencement of
Cava, this variety is today the least representative
of the varieties as it scarcely represents 0.1% of the
surface registered in 2015. It has a small, compact
bunch. It is characterised by its excellent adaptation
to soils with scarce rainfall and high temperatures.
In cava it is normally used as an accompaniment. It
produces fine wines with body and intermediate to
high proof
